Reese's Peanut Butter Chocolate Cheesecake

A dessert that rivals any cheesecake that could be found on the Cheesecake Factory menu...Reese's Peanut Butter Chocolate Cheesecake!  Because let's be honest, peanut butter is delicious.

Hello Redfly Creations readers! I'm Monica and I blog with my friend Caroline on Pass the Cocoa. We're both college sophomores, and in our free time we love baking sweet (and occasionally savory) treats to share with friends, family, and everyone who loves food. We are positively thrilled to be guest posting for Melissa. Her blog is one of my favorites not only for its delicious recipes -- for example, The Amazing Amish Cinnamon Bread, which I made! -- but also for having such wonderfully creative and practical DIY ideas.

Naturally, I wanted this recipe to reflect the DIY theme of Melissa's blog, so here you have it.

This cheesecake is a lot of fun.

...Chunks of Reese's peanut butter cups in the creamy peanut butter cheesecake with a thick layer of delicious dark chocolate ganache and peanut butter drizzle on top. Can anyone say yum?

Hope you enjoy!
Monica

Finely crush Oreos and melted butter in a food processor or using a rolling pin. Press onto the bottom of the springform pan to bake for about 5 minutes.

Beat the room-temperature cream cheese just until it first becomes smooth. It's important not to overbeat, or else additional air will be beaten into the mixture, and the cheesecake will not have the right texture.

Add eggs, one at a time, beating just until it first becomes incorporated but not more. Again, don't overbeat the air into the mixture.

Now for the fun part! Add the brown sugar, peanut butter, heavy cream, and vanilla. Mix until just incorporated.

The batter smells wonderful now, doesn't it? Try to resist the urge to taste the batter...but it's okay if you cave (:

Time for ganache!

Isn't it pretty? I used the microwave method instead of the saucepan.

Now the hard part...waiting! Chill the cheesecake overnight, or at least 4 hours if you're in a rush. The longer, the better, the richer the taste.

Aw so pretty! Doesn't it make you want to just take a fork and dig right in? But wait!

Allow me to cut a slice for you. Bon apetit!

Reese’s Peanut Butter Chocolate Cheesecake
Chunks of Reese's peanut butter cups in the creamy peanut butter cheesecake with a thick layer of delicious dark chocolate ganache and peanut butter drizzle on top.
Yield: 12 servings
Time: 2 hours, plus overnight to chill

Ingredients
For the Crust:
20 Oreo cookies (or chocolate wafers)
4 tablespoons butter, melted

For the Cheesecake:
32 ounces (4 packages) cream cheese, at room temp
5 eggs at room temperature
1 cup packed brown sugar
1 cup peanut butter (NOT low-fat or natural)
1/2 cup heavy whipping cream
1 tablespoon vanilla
2 cups mini peanut butter cups

For the Topping:
6 ounces (2 cups) semi-sweet chocolate
3/4 cup heavy whipping cream, plus an additional 1 tablespoon
1/2 cup peanut butter (NOT low-fat or natural)
20 mini peanut butter cups

Directions
For the Crust:
1. Preheat oven to 350 degrees F. Grease 9-inch springform pan. Finely crush Oreos and melted butter in a food processor until well-blended. Press crumbs evenly onto the bottom (not sides) of prepared pan. Bake just until set, about 5 minutes. Cool while preparing the filling. Maintain oven temperature.

For the Cheesecake:
2. Take your room-temperature cream cheese and beat just until it becomes smooth, and then stop. Do not overbeat. Add eggs one at a time, beating until just incorporated but not more.
3. Add brown sugar, peanut butter, and heavy cream. Beat until just smooth, then add vanilla. Mix for a couple strokes, then stop.
4. Pour half of the cheesecake mixture into the springform pan. Layer with 2 cups of the mini peanut butter cups, then top off with the remaining cheesecake mixture.
5. Turn the oven down to 325 degrees F. Bake for 1.5 hours. Do not open the oven door at any point during the baking process, or else huge cracks will form on the cheesecake surface. To tell if the cheesecake is finished, wiggle it a bit. The sides should be firm, but the middle may be slightly jiggly. Do not use a toothpick to test for done-ness, because it doesn’t really work.
6. Cover the cheesecake springform pan with foil and refrigerate overnight, or at least 4 hours if you’re in a rush.

For the Topping:
7. Heat 3/4 cup heavy whipping cream and 6 ounces semi-sweet chocolate in a medium saucepan over low heat, stirring constantly until smooth. Cool slightly before pouring over the center of the cheesecake (while still in springform pan).
8. Place about 20 mini peanut butter cups along the perimeter of the cheesecake. Cover the cheesecake with foil and chill for another 30 – 60 minutes until the chocolate is set (not wet to the touch).
9. Once the chocolate is set, take the cheesecake out of the refrigerator. Microwave peanut butter and 1 tablespoon heavy whipping cream in 10-second intervals until you achieve a runny consistency, stirring between each interval (should take less than 1 minute).
10. Place in a piping bag (or place inside a plastic bag with the corner tip cut off), and pipe a swirl onto top of the chocolate ganache. Serve and enjoy!

A Chocolate Dipped Valentine's Day

We love chocolate in this household!  I think we have a special chocolate treat associated with almost every national holiday.  :0) At Christmas time each year, we splurge and buy a box of See's Candies (which we fell in love with when we lived in Southern California).   For Thanksgiving, I love to make some sort of chocolate pie.  Easter, well,  chocolate bunnies or eggs of course!   Valentine's Day is no different, chocolate once again makes a presence, but this time it's chocolate covered strawberries.

One of my long time struggles has been keeping the dipping chocolate at the right temperature so that it was easy to work with.  A year or so ago my mom shared with me how she puts her melted chocolate bowl inside another bowl with warm water.  That seemed to really help, but I was always afraid I was going to get water in the chocolate.  Then I came across this idea on pinterest. You simply fill your crock pot with warm water and then set your canning jars, which are filled with the chocolate, in them.  The added beauty to it all, is that the water stays warm all day!  So, if you are constantly getting interrupted, your chocolate doesn't get hard.  You can just come back and work on it when you get the chance!

Ok, so a little 4-1-1.  Fill crock pot almost 3/4 full with hot water.  Turn crock pot on high.  Fill your canning jars with unmelted chocolate (I used chocolate chips).  Let sit about 1/2 hour.  Stir the chips.  If they are all melted, turn the crock pot to low, and you are ready to go.

Have some melting chocolate left over?  Using a spatula spread out the chocolate on your wax paper in the shape of a heart.  Or using a zip lock bag, pipe words onto the wax paper to use on other valentine treats!

What else can you dip in chocolate?  We'll I'd probably argue there isn't much that doesn't taste better dipped in chocolate!  Here are a few more great ideas...

Disappearing Cookies

If you are a regular at Redfly, then you have probably noticed that I love baked sweets.  I can go without candy any day, but cookies!  Well, they are much harder to resist.

The soft and chewy chocolate consistency of these cookies lead to their name - the disappearing cookies.  Don't believe me?  Here is how it works:  First, bake a batch.  Then after you've eaten your automatic baker's privilege of 2 or 3, then put them out where your family can see them.  Finally, wait 3-5 minutes and you'll see what I mean!

Disappearing Cookies

Mix:
1/2 cup stick butter
1 cup sugar
1 egg

Add:
1/2 cup cocoa ( Do not use Hershey's cocoa for these cookies, or the cookies will taste bitter.  Nestle or even the Aldi brand work much better).
1 1/2 teaspoon vanilla

Stir in:
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cup oatmeal

Technically this recipe should make about 24 cookies.  I like mine to be a good size, so it only makes about 15 cookies for me.

Bake at 350 degrees for 10-12 minutes.  They will harden a little as they cool.

Transfer to wax paper to cool for a few minutes before eating.  Try not to eat too many in a row. ;0)

Guest Post: Dairy Queen Ice Cream Cake

I love ice cream cakes.  That is actually what I ask for every year for my birthday and mother's day. Yep, I'm spoiled! ;0)   It actually works out nicely because there is no stress in trying to make me some great dessert for my birthday--- just pick up a Dairy Queen ice cream cake and I am thrilled.  By the way we even tried a cold stone ice cream cake one year and we all agreed that the Dairy Queen cake was much better.

Anyway, getting on with the post.... today we have a guest post!!  Sarah and Julia blog over at All Things With Purpose, and they are going to share with us their version of a homemade Dairy Queen ice cream cake.

I Looove Dairy Queen Ice Cream Cake!

But, it's fairly expensive. Here is the recipe I've used, quite a few times, to recreate the goodness:

What You Need:
1 Package Oreo Cookies or Store Brand Chocolate Cookies
1 Container Vanilla Ice Cream (or flavor of your choice)
1 Container Chocolate Ice Cream (or flavor of your choice)
1 Cup Chocolate Syrup (or enough to coat crumbs and turn into a thick "goo" that is easily spreadable)
1 Container Frozen Whipped Topping
1 Spring Form Pan (for easy removal!)
1 Tablespoon Butter

1. I started with the super cheap pails of chocolate and vanilla ice cream. I wouldn't necessarily recommend this, as it doesn't taste all that great. But hey, it's up to you to use whatever you like!

Decadent Chocolate Fudge Cake

I love to bake desserts.  Because of that, many times when we go out to eat and decide to get dessert I am very disappointed.  Cakes are dry, puddings or custards are rubbery, pie crusts are not flaky, etc...  Don't get me wrong, I still enjoy them, but I always leave thinking, "the desserts I make at home taste much better than this!"   With this in mind, I decided that for our anniversary I would make our own dessert to enjoy at home, avoiding the disappointing end to a great meal.  I already had a chocolate cake baked and waiting in the freezer, but I wanted something to finish it off that would be spectacular.  So, where did I search?  Of course, Pinterest!

After my long search I settled on trying this frosting by My Homemade Life.  The fun thing about this recipe was that when you stick it in the fridge, it hardens and tastes just like fudge!

It was absolutely delicious!!!  I will definitely be making it again.  The leftover frosting we have been using on top of vanilla ice cream.  YUMMMM!  Just posting these pictures is making my mouth water.... :0)

Happy Anniversary Babe!!!

Homemade Chocolate Dipped Granola Bars

I'm in love..........  I think I just found my favorite granola bar recipe!

Don't these look delicious?

Ok, ok, I'll share it with you!

I made my own granola for this recipe.  You can use store boughten granola if you'd like though.

Granola recipe:

INGREDIENTS:

8 cups of oats
2 cups peanuts- finely chopped
1/2 cup olive oil
1/2 cup melted butter ( or margarine)
1 cup honey
pinch of salt
1/2 tsp cinnamon

DIRECTIONS:

Mix all ingredients together in a very large bowl.  Spread on cookie sheet and bake for 15-20 minutes at 350 degrees.  Check and stir after each 10 min.  Let cool and store in airtight container.

Granola Bar recipe:

INGREDIENTS:

2 cups granola
1/2 cup creamy peanut butter
1/4 cup honey
1 cup semi-sweet chocolate chips

DIRECTIONS:

Mix first three ingredients together, spread in a greased 8X8 pan.  Spread chocolate chips on top.  Bake at 350 for 2-3 minutes or until chocolate chips are melted.  (You can avoid the whole baking thing by simply melting your chips and pouring them over the granola mixture.) Spread the melted chocolate evenly over the granola mixture.  Let cool until set.  (about 1 hr. in the fridge).  Cut into bars and enjoy.

Makes about 12 bars.

Update 12/18/2012 - I have made custom gift labels for these granola bars.  You may download them here.
