Homemade Chocolate Dipped Granola Bars




I'm in love..........  I think I just found my favorite granola bar recipe!

Ok, ok, I'll share it with you!


I made my own granola for this recipe.  You can use store boughten granola if you'd like though.


Granola recipe:

INGREDIENTS:

8 cups of oats
2 cups peanuts- finely chopped
1/2 cup olive oil
1/2 cup melted butter ( or margarine)
1 cup honey
pinch of salt
1/2 tsp cinnamon

DIRECTIONS:

Mix all ingredients together in a very large bowl.  Spread on cookie sheet and bake for 15-20 minutes at 350 degrees.  Check and stir after each 10 min.  Let cool and store in airtight container.


Granola Bar recipe:

INGREDIENTS:

2 cups granola
1/2 cup creamy peanut butter
1/4 cup honey
1 cup semi-sweet chocolate chips

DIRECTIONS:

Mix first three ingredients together, spread in a greased 8X8 pan.  Spread chocolate chips on top.  Bake at 350 for 2-3 minutes or until chocolate chips are melted.  (You can avoid the whole baking thing by simply melting your chips and pouring them over the granola mixture.) Spread the melted chocolate evenly over the granola mixture.  Let cool until set.  (about 1 hr. in the fridge).  Cut into bars and enjoy.  

Makes about 12 bars.
