Our Family Favorite Taco Casserole

Last night we ate Taco Casserole.  It has become one of our favorite meals.  This spring the kids spent about a week at their Papa and Nana's house.  It was quite a challenge for my mother-in-law to find a meal that all three of the kids liked.  Especially since one of them is a pretty picky eater.  The night she introduced Taco Casserole, everyone was happy, and boy did they eat well.  Needless to say, when they arrived back home I heard all about their new favorite.


 It quickly became a regular in our meal planning.



I credit this recipe to my mother-in-law, who said she got it from my sister-in-law, who said she got it from her cousin.  So, I am not exactly sure who all to credit, but it sure is good!

Recipe:

1. Spread biscuit mix on bottom of 9x13 pan.  I find that it is about the equivalent to 2 cups of biscuit mix, and whatever amount of liquid your recipe calls for.   I usually make my mix from scratch:
2 cups flour
3 tsp baking powder
1 tsp salt
1/4 marg. or shortening
1 cup milk

2.  Brown 1 1/2 lbs. of hamburger and mix in 1 package of taco seasoning. Layer the meat on top of the biscuit mix.

3. Spread 8 oz of sour cream on top of meat mixture.

4.  Spread 8 oz of shredded cheddar cheese over the sour cream.

5. Crunch 1/2 bag of doritos and sprinkle them on top.

Bake at 350 degrees for 30 min.
