Apple Pie Pops





Nothing says 4th of July like Apple Pie - or in this case Apple Pie Pops!


4th of July and apple pie!  Yet this is no ordinary apple pie.  These are Apple Pie Pops.  They are a fun, quick and easy treat to make.  I love the way they turned out.  They are delicious and are sturdy on the stick.  Now we have a perfect way to conveniently eat pie while watching fire works this year.


Ingredients
(makes 10-12 pies)

1 pie crust (you can find my favorite pie crust recipe here)
2 apples- pealed, and diced
1/4 cup sugar
1 Tablespoon flour
1 teaspoon cinnamon
(1 egg yolk and 1 tsp milk for wash)


Instructions

Place all of the above ingredients (except for the egg yolk and milk) in a microwave safe bowl.  Cook for 2 minutes on high.  Stir, then cook one minute longer, or until apples are soft.  

Roll out the pie crust about 1/8" thick.  Cut with cookie cutters.  Put approximately 1 tsp of filling in the center of each star (or whatever shape you choose).


Place a second star on top of the first with the filling.  Press the edges closed with a fork.


Now place the mini pies on a baking sheet.  Turn the pies upside down and press the edges again on this side with the end of a wooden skewer.  Then take a wooden skewer and stick it into each pie.  With your fingers press the raw pie crust around the skewer.    Then cut three little slits with a sharp knife in the center of the pies.


Mix the egg yolk and 1 tsp of milk and make a wash.  Brush the mixture over the pies and bake the pies  at 350 for 15-20 minutes, or until lightly browned.


Let cool for  15 minutes to allow the skewers to become secure in the pies.


Enjoy and have a happy 4th of July!!!
